Ingredients

½ cup prepared plant-based milk (preferably soy or cashew milk)
2¼ tsp active dry yeast (1 packet)
2 tbsp sugar
2 tbsp melted vegan butter or refined coconut oil
3 tbsp aquafaba (chickpea brine, as an egg replacer)
2½ cups all-purpose flour (plus extra for kneading)
½ tsp salt
1 tbsp neutral oil (for greasing)
Optional: 1 tbsp plant-based milk for brushing the top

Directons

To prepare, start by warming ½ cup of soy or cashew milk to about 110°F. In a small bowl, combine the warm milk, sugar, and yeast. Let it sit for 5–10 minutes until it becomes foamy. This step activates the yeast, ensuring your brioche rises properly.
In a large mixing bowl, whisk together the flour and salt. Make a well in the center and add the yeast mixture, melted vegan butter (or coconut oil), and aquafaba. Mix until a shaggy dough forms. Transfer the dough to a floured surface and knead it for 8–10 minutes, adding flour 1 tablespoon at a time if the dough feels sticky. Knead until the dough is smooth and elastic.
Lightly oil a clean bowl, place the dough inside, and cover it with a damp towel or plastic wrap. Let it rise in a warm place for 1–1.5 hours, or until it doubles in size. Once risen, punch the dough down and shape it into a loaf, or divide it into three pieces if you’d like to braid the bread. Place the dough into a greased loaf pan, cover again, and allow it to rise for another 45 minutes to 1 hour.
Preheat your oven to 350°F (175°C). Before baking, brush the top of the loaf with a little plant-based milk to give it a golden finish. Bake for 25–30 minutes, or until the loaf is golden brown and sounds hollow when tapped.
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy as a soft, fluffy, and flavorful treat.
