For the Batter
3 tbsp oat pulp
1 small ripe banana, mashed
1 egg
2 tbsp flour
¼ tsp cinnamon
½ tsp baking powder
Pinch of salt

Butter or oil for the pan
In a bowl, mash the banana and whisk in the egg until smooth.
Add the oat pulp, flour, cinnamon, baking powder, and salt. Stir until well combined.
Heat a nonstick pan over medium heat and lightly grease with butter or oil.
Spoon small rounds of batter into the pan. Cook 2–3 minutes per side, or until golden and cooked through.
Serve warm with maple syrup, nut butter, or fresh fruit.
